His journey has taken him from prestigious accolades early in his career—runner-up for National Chef of the Year, induction into the Craft Guild of Master Chefs, and winner of the Cherie Granger Memorial Award—to the helm of some of the world’s most exclusive dining destinations.
Chef Hughes has cooked aboard super yachts across the Caribbean, Baltics, and Pacific Islands, owned and operated two award-winning bistro wine bars, and, for the past two decades, has led culinary programs at top-tier luxury chalets and heli-ski lodges around the globe.
Most notably, he was the driving force behind the culinary experience at Bighorn Lodge, transforming it from a construction site into The World’s Best Ski Chalet—a title it held for five consecutive years during his 12-year tenure.

As Executive Chef and Manager of Bighorn Revelstoke, I was head hunted to help create and establish a luxurious Lodge with exquisite and delicious food, accompanied with hand selected wines and served by highly trained team of over 20 staff.

Other Passions
World travel has inspired my food, photography and my Golf. I have played all around the world, starting from a young age and having achieved 'scratch' status, my plan is to play golf in as many places in the world as I can.
Photography and Art is another passion and I have taken pictures of wildlife from Grizzly Bears in The Great Bear Rainforest in Vancouver, Orcas in the Juan De Fuca Straits, Eagles and Black Bears all over BC as well as some published travel photography in South East Asia, Australia, Europe and the UK.
